Rootin' Tootin' Black Bean Quesadillas

olive oil
1/2 can of vegetarian black beans
1 small can of sliced black olives
fresh sliced mushrooms
flour tortillas
shredded cheddar cheese

Warm the black beans on the stove top or in the microwave in a microwave safe dish. Sautee the mushrooms in olive oil. Once the mushrooms are prepared, add in the black beans and black olives.

In a frying pan, add a bit of olive oil, moving it around to coat the frying pan. Next add a flour quesadilla which will cook until it bubbles a bit. Flip it, then add a coating of shredded cheddar cheese to the face of the quesadilla making sure not to get any cheese on the pan. Add on your bean/shroom/olive mixture - not too thickly, though. Cover the pan, watching it every 20 seconds or so until the cheese melts. When the cheese is melted, fold one side over the other and serve.
